Food for the Collation
The 'villiagers' from the neighborhood 'round about Seigneur de la Tour du Lac's estate will be welcomed with a collation of cold and hot foods.  Since Seigneur de la Tour du Lac's cook, Jeanne Marie and her staff, will be quite busy preparing the Grande Feste for the nobility upstairs, his neighbor Master Luke Knowlton has offered to provide the food, cooks and serving staff from his estate as a gift of friendship to his old friend.

A bill of fare for the villagers collation will probably include:

La Mourtairol (bread soup in chicken stock with saffron)
Pease Pottage
Braised Pork with Onions and Chestnuts
Trout Rilletes
Duck Rilletes
Country Pate of Duck and Duck Liver
Country Pate of Pork and Pork Liver
Green Chicken (seasoned minced chicken and veal cooked in cabbage leaves)
Standing Pies of Poultry (chicken and duck)
Pork Sausages
Boudin (sausage of chicken and duck) (cloth casings)
Fish Sausages (pork casings)
Fried Cabbage and Onions
Perigordin Garlic Sauce
Turnip Tarts
Fava Bean Tarts
Pickled Cucumbers, Onions, Garlic, and Eggs
Omelets
